Turkey Cranberry Melt

This turkey cranberry melt is a quick little number you can make with leftover turkey from Thanksgiving, or any deli turkey! I’ve got sourdough bread spread with a flavorful sage-infused mayo, topped with roasted turkey, two types of cheese, and a smear of fresh cranberry sauce that adds sweetness and tang- all pan toasted until buttery crisp. I love a toasty sandwich with melty cheese, and I also like to pull the bread apart and stuff in some cold dressed greens. I think the contrast is so delicious- but feel free to eat this with our without the greens!

Ingredients Needed

  • Sturdy Sandwich Bread – I’m using a sourdough sandwich loaf.
  • Mayo
  • Sage – can use fresh minced or dry rubbed sage
  • Vinegar – I like to dress my greens with a little olive oil and vinegar, I’m using a cranberry pear vinegar (use code ourbestbites for a discount) but apple cider would work too.
  • Turkey – leftover roasted turkey is awesome. I’m using smoked turkey. Deli turkey would also be delicious!
  • Cranberry Sauce – I use my fresh cranberry sauce, found here.
  • Cheese – Use you favorite mellow white cheese. I like Havarti and a little brie if I’m feeling extra. Trader Joes has little packs of mini brie that work great for things like this.
  • Greens – I used spring mix, but any lettuce works great.
  • Olive Oil
  • Salt and Pepper
  • Butter – used for toasting the outside of the sandwich

How to Assemble….

  1. Mix up the flavored mayo ingredients (you can do this part ahead of time).
  2. Spread it onto some hearty sandwich bread.
  3. Layer on the turkey, cranberries, and cheese.
  4. Toast it in a buttered skillet until bread is golden and cheese is melty.
  5. While it’s toasting, toss some greens in olive oil and vinegar, season with salt and pepper.
  6. After the sandwich is done, open it up and stuff in the greens. Eat immediately.

Ingredients

Sage Mayo

  • ½ cup mayonnaise
  • 1 tablespoon sage, fresh, minced or 1 teaspoon dry rubbed sage
  • ¼ teaspoon apple cider vinegar red or white wine vinegar is also fine, or a sweet white balsamic
  • 2 cracks black pepper

Sandwich

  • 2 large slices sandwich bread, sturdy
  • 4 slices havarti cheese
  • turkey sliced or shredded
  • a few slices brie trim off rind if desired
  • 2-3 tablespoons cranberry sauce
  • 2 tablespoons butter
  • 1 cup greens of your choice
  • olive oil and vinegar, salt and pepper

Instructions

  • Mix mayo, sage, and vinegar together. You can do this step ahead if you like. This will be enough mayo for at least 2 sandwiches.
  • Spread mayo on 2 slices of bread. Place a layer of havarti cheese on one slice.
  • Place turkey on top of cheese, add brie if using or a little more cheese. Drizzle with some cranberry sauce and top with final slice of bread.
  • Heat a skillet to medium heat. Melt 1 tablespoon of butter and place sandwich directly on top of melted butter. (Alternately you could also just spread your butter onto the outside of your sandwich slices). Put a lid on the pan to help melt the cheese.
  • Pick up sandwich with spatula and melt remaining butter in pan, flip sandwich on top of melted butter.
  • Cook until both sides of bread are toasted and golden and cheese is melted.
  • While sandwich is cooking, place greens in a bowl and add a light drizzle of olive oil and vinegar, along with a small sprinkle of salt and pepper. Toss well.
  • When sandwich is done, carefully open it and stuff in greens. Serve immediately.
